Leftover chicken from last night. Sides of green beans and sliced potatoes.

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, combine the sliced potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.

  • 3.

    Spread the potatoes on a baking sheet and bake for 15 minutes.

  • 4.

    After 15 minutes, add the green beans to the baking sheet and return to the oven for another 10 minutes.

  • 5.

    While the vegetables are baking, heat the leftover chicken in a skillet over medium heat until warmed through.

  • 6.

    If using spinach, add it to the skillet with the chicken for the last 2 minutes of cooking.

  • 7.

    Serve the chicken alongside the roasted potatoes and green beans.

    2 cups leftover cooked chicken, shredded or diced

  • 2.

    2 cups green beans, trimmed

  • 3.

    4 medium potatoes, sliced

  • 4.

    1 tablespoon olive oil

  • 5.

    1 teaspoon garlic powder

  • 6.

    1 teaspoon onion powder

  • 7.

    Salt and pepper to taste

  • 8.

    1 cup fresh spinach (optional for added fiber)
