Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the diced potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.

  • 3.

    Spread the potatoes on a baking sheet and roast in the oven for 25-30 minutes, or until golden and tender, flipping halfway through.

  • 4.

    While the potatoes are roasting, season the chicken breasts with the remaining olive oil, salt, and pepper.

  • 5.

    In a skillet over medium heat, cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.

  • 6.

    In the last few minutes of cooking the chicken, add the spinach to the skillet and sauté until wilted.

  • 7.

    Serve the chicken alongside the roasted potatoes and sautéed spinach.
