Instructions

1. Cook the brown rice according to package instructions. This usually takes about 20 minutes.

2. While the rice is cooking, season the chicken breasts with salt and pepper.

3. Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked.

4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

5. In a large bowl, layer the cooked brown rice, chopped lettuce, sliced avocado, julienned carrots, and sliced chicken.

6. Sprinkle sesame seeds on top and drizzle with soy sauce if desired.

7. Serve immediately and enjoy your healthy chicken and rice bowl!
