Instructions
1.
Cook the brown rice according to package instructions (about 25 minutes).

In a large skillet, heat olive oil over medium heat. Add diced chicken breast and season with garlic powder, salt, and pepper. Cook for about 5-7 minutes until browned and cooked through.

Add broccoli, carrots, and cabbage to the skillet. Stir-fry for another 5-7 minutes until the vegetables are tender but still crisp.
4.
Pour in the low-sodium soy sauce and ginger, stirring to combine. Cook for an additional 2 minutes.
5.
Serve the chicken and vegetable mixture over the cooked brown rice.
