Instructions

  • 1.

    1. Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.

    2. In a medium pot, bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.

    3. While the rice is cooking, heat olive oil in a large skillet over medium heat.

    4. Add the diced chicken breast to the skillet and season with garlic powder, salt, and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.

    5. Add the broccoli and bell peppers to the skillet, stirring well. Cook for an additional 5 minutes until the vegetables are tender.

    6. Once the rice is cooked, fluff it with a fork and add it to the skillet with the chicken and vegetables.
