Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add diced chicken breast and cook until browned and cooked through, about 5-7 minutes.

  • 3.

    Stir in mixed vegetables and cook for another 3-4 minutes until tender.

  • 4.

    Push the chicken and vegetables to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until fully cooked.

  • 5.

    Combine everything in the skillet and add the cooked rice, soy sauce, salt, and pepper. Stir well to combine and heat through for another 2-3 minutes.

  • 6.

    If using, stir in fresh spinach until wilted before serving.

    1 tablespoon olive oil

    Salt and pepper to taste

    Fresh spinach (optional, for added fiber)

    Ketchup (for serving, optional)
