Instructions
1.
Preheat your oven to 400°F (200°C).

Toss the diced sweet potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes.

While the sweet potatoes are roasting, heat a non-stick skillet over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 7-10 minutes.

Add the green beans to the skillet with the chicken and cook for an additional 5 minutes until tender.

Once the sweet potatoes are done, combine them with the chicken and green beans in the skillet. Stir in the cooked brown rice and spinach (if using) until everything is heated through.
6.
Serve warm and enjoy your healthy chicken and rice meal!
