Instructions

  • 1.

    1. Start by cooking the sweet potatoes. Peel and chop them into cubes, then boil in salted water for about 15 minutes until tender. Drain and mash them with a fork.

    2. While the sweet potatoes are cooking, grill or bake the chicken breast until fully cooked (about 20 minutes at 375°F). Shred the chicken once it's cooled slightly.

    3. In a large bowl, combine the mashed sweet potatoes, shredded chicken, and chopped spinach. Mix well until the spinach is wilted.

    4. Add diced tomatoes and avocado to the mixture, gently folding them in.
