Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine the chicken breast, olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat the chicken evenly.
3.
Place the chicken on a baking sheet lined with parchment paper.
4.
In the same bowl, add the broccoli, cauliflower, and carrots. Drizzle with a little more olive oil, season with salt and pepper, and toss to coat.
5.
Spread the vegetables around the chicken on the baking sheet.
6.
Bake for 25 minutes or until the chicken is cooked through and the vegetables are tender.
7.
Remove from the oven and drizzle with fresh lemon juice before serving.

2 cups broccoli florets

2 cups cauliflower florets
4.
2 cups carrots, sliced
5.
2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste
9.
1 tablespoon fresh lemon juice
