Wrap with chicken avocado onion cilantro lime tomato. Ended up making these for 3 of my boys wife and parents in law! Guess we will be eating this more often! Very good! Cleaning out the fridge today so I can start prepping my meals better!

The wrap you made looks delicious and nutritious. Its a great way to use up whats in the fridge and prep for the week ahead. Keep finding joy in these healthy meals!

Instructions

  • 1.

    In a large bowl, combine the shredded chicken, sliced avocado, red onion, cilantro, lime juice, and cherry tomatoes. Mix gently to combine. (5 minutes)

  • 2.

    Lay out the tortillas on a clean surface. (1 minute)

  • 3.

    On each tortilla, layer a handful of mixed greens and spinach. (2 minutes)

  • 4.

    Spoon the chicken and avocado mixture evenly onto each tortilla. (3 minutes)

  • 5.

    Wrap the tortillas tightly, folding in the sides as you roll them up. (2 minutes)

  • 6.

    Slice in half and serve immediately, or wrap in foil for later. (2 minutes)

    2 cups cooked, shredded chicken breast

    1 ripe avocado, sliced

    1 small red onion, thinly sliced

  • 4.

    1/4 cup fresh cilantro, chopped

    Juice of 1 lime

    1 cup cherry tomatoes, halved

  • 7.

    4 whole grain or spinach tortillas

  • 8.

    2 cups mixed greens

  • 9.

    1 cup fresh spinach
