Instructions

1. Cook quinoa according to package instructions and set aside.

2. Grill or sauté chicken breast until fully cooked, then dice into bite-sized pieces.

3. In a large bowl, combine cooked quinoa, diced chicken, cucumber, cherry tomatoes, pickled onions, and leafy greens.
