Instructions

    In a large skillet, heat sesame oil over medium heat (about 2 minutes).

    Add ground chicken and cook until browned, about 5-7 minutes, breaking it apart with a spatula.

    Stir in carrots, red bell peppers, and spinach. Cook for another 3-4 minutes until vegetables are tender.

  • 4.

    Add soy sauce, salt, and pepper. Mix well and cook for an additional 2 minutes.

  • 5.

    Remove from heat and stir in cucumbers and tomatoes.

  • 6.

    Serve in bowls and top with chopped green onions.
