Instructions
1.
In a large skillet, heat sesame oil over medium heat (about 1-2 minutes).

Add ground chicken and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
3.
Stir in shredded carrots, diced red bell peppers, and cook for another 3-4 minutes until vegetables are tender.
4.
Add chopped spinach, diced tomatoes, and green onions, cooking for an additional 2-3 minutes until spinach wilts.
5.
Pour in low-sodium soy sauce, stirring to combine. Season with salt and pepper to taste.
6.
Serve warm in bowls, garnished with extra green onions if desired.
