Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add diced onion and garlic, sauté until translucent (about 3-4 minutes).

Season chicken breasts with salt, pepper, and Italian seasoning, then add to the skillet. Cook for 5-7 minutes on each side until cooked through.

Add sliced zucchini and diced tomatoes to the skillet. Stir well and cook for another 5 minutes until zucchini is tender.
5.
Sprinkle mozzarella cheese on top and cover the skillet. Cook for an additional 2-3 minutes until cheese is melted.

4 boneless, skinless chicken breasts (about 1.5 lbs)

2 medium zucchinis, sliced
3.
1 can (14.5 oz) diced tomatoes, no added sugar
4.
1 cup part-skim mozzarella cheese, shredded

1 medium onion, diced

2 cloves garlic, minced
7.
1 tablespoon olive oil
8.
1 teaspoon Italian seasoning
9.
Salt and pepper to taste
