Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add chopped onions and bell peppers, sautéing until softened (about 5 minutes).

Stir in minced garlic and sliced mushrooms, cooking for another 3 minutes.
4.
Season the chicken breasts with salt, pepper, oregano, and basil, then add them to the skillet.
5.
Pour in the tomato sauce, cover, and simmer for 20 minutes, or until the chicken is cooked through.
6.
Serve the chicken cacciatore over cooked polenta, garnished with fresh herbs if desired.
