Instructions
1.
Cook the whole grain gluten-free pasta according to package instructions. Drain and set aside (about 10 minutes).

In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, Kalamata olives, artichoke hearts, and fresh spinach.

Drizzle the light Caesar dressing over the salad and toss gently to combine. Season with salt and pepper to taste.

Serve immediately or refrigerate for up to 2 days for a quick meal prep option.
