I am really proud of this dinner!!!! I chopped up super fine a chicken breast to make chicken mice and made chicken chilli with kidney beans. I have served with roasted mushroom and corn on the cob and will have a little light cream fraiche on the side Its Friday and I had a tough week at work so this is groundbreaking effort as I would normally get a celebratory take away

Instructions

    Heat olive oil in a large pot over medium heat (about 2 minutes).

    Add chopped onion and bell pepper, sauté until softened (about 5 minutes).

    Stir in minced garlic and cook for another minute.

  • 4.

    Add ground chicken, breaking it up with a spoon, and cook until browned (about 7-10 minutes).

  • 5.

    Mix in chili powder, cumin, salt, and pepper, cooking for another minute to release flavors.

  • 6.

    Add diced tomatoes, kidney beans, and corn, stirring to combine.

  • 7.

    Bring to a simmer, cover, and cook for 15-20 minutes, stirring occasionally.

    If using, stir in fresh spinach just before serving until wilted.
