Instructions

  • 1.

    Preheat your oven to 375°F (190°C).

  • 2.

    Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

  • 3.

    Spread a thin layer of Dijon mustard on each chicken breast, then layer with a slice of ham and a slice of cheese.

  • 4.

    Roll the chicken tightly and secure with toothpicks.

  • 5.

    Dip each roll in olive oil, then coat with whole wheat breadcrumbs.

  • 6.

    Place the chicken rolls in a baking dish and bake for 25-30 minutes until cooked through.

  • 7.

    While the chicken is baking, heat a skillet over medium heat and add the chopped turkey bacon. Cook until crispy.

  • 8.

    Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent.

  • 9.

    Add the green beans and sauté for about 5-7 minutes until tender. Season with salt and pepper.

  • 10.

    Serve the chicken cordon bleu with the sautéed green beans on the side.

    4 slices of low-fat Swiss cheese

    1 cup whole wheat breadcrumbs

  • 5.

    1 tablespoon Dijon mustard

    1 tablespoon olive oil

  • 7.

    2 cups green beans, trimmed

  • 8.

    1 small onion, diced

  • 9.

    2 cloves garlic, minced

  • 10.

    2 slices of turkey bacon, chopped

  • 11.

    Salt and pepper to taste
