Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, combine the cooked chicken and brown rice. Mix well until fully combined.
3.
Spread the chicken and rice mixture onto a parchment-lined baking sheet, forming a crust about 1/2 inch thick.
4.
Bake the crust for 15-20 minutes, or until golden brown and firm.
5.
Remove the crust from the oven and spread the pesto sauce evenly over the top.
6.
Layer the shredded chicken, red onion, and microgreens on top of the pesto.
7.
Return to the oven and bake for an additional 5-10 minutes, until heated through.
8.
Drizzle with lime juice and sprinkle with cilantro before serving.
