Instructions

  • 1.

    Preheat your oven to 375°F (190°C).

  • 2.

    In a large bowl, mix the shredded chicken, cumin, garlic powder, salt, and pepper.

  • 3.

    Spread a thin layer of enchilada sauce on the bottom of a baking dish.

  • 4.

    Fill each tortilla with the chicken mixture and a handful of chopped spinach, then roll them up tightly.

  • 5.

    Place the rolled tortillas seam-side down in the baking dish.

  • 6.

    Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

  • 7.

    Bake for 20-25 minutes until the cheese is melted and bubbly.

  • 8.

    Serve hot, topped with Greek yogurt and sliced jalapeños.

  • 6.

    1 cup chopped spinach

    1 jalapeño, sliced

  • 8.

    1 teaspoon cumin

  • 9.

    1 teaspoon garlic powder

  • 10.

    Salt and pepper to taste
