Instructions
1.
Preheat your oven to 375°F (190°C).

In a large bowl, combine the shredded chicken, diced tomatoes, black beans, chopped spinach, cumin, chili powder, salt, and pepper. Mix well.
3.
Lay out the low-carb tortillas and fill each with the chicken mixture, rolling them up tightly.
4.
Place the rolled enchiladas seam-side down in a baking dish.
5.
Pour the chicken broth over the enchiladas and sprinkle the shredded cheese on top.
6.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
7.
Garnish with fresh cilantro before serving.
