Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add sliced chicken breast and cook until browned (about 5-7 minutes).
3.
Stir in sliced onions and bell peppers, cooking until softened (about 5 minutes).
4.
Season with chili powder, cumin, salt, and pepper, mixing well.

Add spinach or mixed greens and cook until wilted (about 2 minutes).
6.
Serve the fajita mixture over a bed of greens, topped with low-fat sour cream and cheese if desired.
