I had a late dinner of 4 oz chicken fajita meat fajita vegetables and a small amount of low fat sour cream on 50g lettuce.

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

    Add sliced chicken breast and cook until browned (about 5-7 minutes).

  • 3.

    Stir in sliced onions and bell peppers, cooking until softened (about 5 minutes).

  • 4.

    Season with chili powder, cumin, salt, and pepper, mixing well.

  • 5.

    Add spinach or mixed greens and cook until wilted (about 2 minutes).

  • 6.

    Serve the fajita mixture over a bed of greens, topped with low-fat sour cream and cheese if desired.
