Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add sliced chicken breast and cook until browned, about 5-7 minutes.
3.
Stir in the sliced bell peppers and onion, cooking for another 5 minutes until vegetables are tender.
4.
Add chili powder, cumin, garlic powder, salt, and pepper. Stir well to combine and cook for an additional 2-3 minutes.
5.
In a separate pan, heat cauliflower rice according to package instructions.
6.
Serve the chicken and vegetable mixture over cauliflower rice, topped with reduced-fat cheese and Greek yogurt.
