Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

    Add sliced chicken breast and cook until browned, about 5-7 minutes.

    Stir in the adobo seasoning, salt, and pepper, cooking for another 2 minutes.

  • 4.

    Add sliced onions and bell peppers to the skillet, cooking until tender, about 5-7 minutes.

    In a separate pan, heat cauliflower rice for about 5 minutes until warmed through.

    Serve the chicken and vegetable mixture over the cauliflower rice, garnished with fresh cilantro.
