This was surprisingly good. 6oz chicken breast with 60g kale (microwaved) some crunchy salad topping sample I got at Costco (low in calories and fat!) and 1/2 oz feta cheese sprinkled on top.

Instructions

    In a large bowl, combine the chopped kale and olive oil. Massage the kale for about 2-3 minutes until it softens.

  • 4.

    Drizzle with lemon juice and season with salt and pepper to taste.
