Instructions
1.
In a bowl, combine chicken cubes with olive oil, garlic powder, paprika, salt, and pepper. Mix well and let marinate for at least 10 minutes.

While the chicken is marinating, prepare the salad. In a large bowl, mix shredded cabbage, chopped kale, dried cranberries, and pumpkin seeds.

In a small bowl, whisk together yogurt, lemon juice, and Dijon mustard to create a creamy dressing. Adjust seasoning as needed.

Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
5.
Grill the chicken kebabs for about 5-7 minutes on each side, or until fully cooked and golden brown.
6.
Serve the chicken kebabs over the salad and drizzle with the creamy dressing.
