Instructions

1. Rinse the brown rice under cold water and cook it according to package instructions, using water or low-sodium vegetable broth for added flavor (about 30 minutes).

2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).

3. Add minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

4. Stir in the diced chicken breast, cooking until browned on all sides (about 5-7 minutes).

5. Add curry powder, cumin, turmeric, salt, and pepper, mixing well to coat the chicken.

6. Add the mixed vegetables and broccoli, stirring to combine. Cover and cook for another 10 minutes, or until the vegetables are tender and the chicken is cooked through.

7. Serve the chicken masala over a bed of brown rice, garnished with fresh cilantro if desired.

1 teaspoon cumin

1 teaspoon turmeric

Salt and pepper to taste

Fresh cilantro for garnish (optional)
