Instructions
1.
In a large bowl, combine the ground chicken, chopped onions, breadcrumbs, egg (if using), garlic powder, paprika, salt, and pepper. Mix until well combined. (5 minutes)

Form the mixture into small patties, about 1/2 inch thick. (5 minutes)

Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-7 minutes on each side, or until golden brown and cooked through. (10-15 minutes)
4.
While the patties are cooking, prepare the salad by mixing diced tomatoes, cucumber, and shredded carrots in a bowl. Drizzle with olive oil and lemon juice, and toss to combine. (5 minutes)
5.
Serve the chicken patties on a plate with the salad boats on the side, allowing you to fill the lettuce leaves with the salad mixture. Enjoy! (2 minutes)

1 egg (optional, for binding)

1 tsp garlic powder

Salt and pepper to taste

4 large romaine lettuce leaves (for salad boats)
9.
1 cup diced tomatoes
10.
1/2 cup cucumber, diced
11.
1/4 cup shredded carrots
12.
1 tbsp olive oil (for dressing)
13.
1 tbsp lemon juice (for dressing)
