Instructions
1.
1. Preheat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.

2. In a bowl, mix the shredded chicken, cheese, spinach, bell peppers, cumin, paprika, salt, and pepper until well combined.
3.
3. Place one chickpea flour tortilla in the skillet and spread half of the chicken mixture evenly over it.
4.
4. Top with another tortilla and cook for about 3-4 minutes until golden brown.
5.
5. Carefully flip the quesadilla and cook for another 3-4 minutes until the cheese is melted and the tortilla is crispy.
6.
6. Remove from the skillet, cut into wedges, and serve warm.

2 cups grilled chicken breast, shredded

1 cup Monterey Jack cheese, shredded
3.
4 chickpea flour tortillas
4.
1 cup spinach, chopped
5.
1/2 cup bell peppers, diced
6.
1/2 teaspoon cumin
7.
1/2 teaspoon paprika
8.
Salt and pepper to taste
9.
Cooking spray or olive oil for grilling
