Instructions
1.
Heat olive oil in a skillet over medium heat (about 2 minutes).
2.
Add diced onion and bell pepper, sauté until softened (about 3-4 minutes).
3.
Stir in chopped spinach and cook until wilted (about 1-2 minutes).
4.
In a separate skillet, place one Lavash bread and sprinkle half of the cheese on one half.
5.
Layer half of the chicken mixture on top of the cheese, then fold the Lavash over.
6.
Cook for 3-4 minutes on each side until golden brown and cheese is melted.
7.
Repeat with remaining ingredients to make additional quesadillas.
Ingredients
1.
2 cups cooked, shredded chicken breast
2.
4 Joseph's Lavash breads
3.
1 cup low-fat shredded cheese (like mozzarella or cheddar)
4.
1 cup spinach, chopped
5.
1/2 bell pepper, diced
6.
1/2 onion, diced
7.
1 tablespoon olive oil
8.
Salt and pepper to taste
