Instructions
1.
1. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.

2. Place one tortilla in the skillet and layer half of the shredded chicken, sliced bell pepper, spinach, and half of the cheese on one half of the tortilla.
3.
3. Fold the tortilla over to create a half-moon shape and cook for about 3-4 minutes until the bottom is golden brown.

4. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
5.
5. Remove from the skillet and repeat with the remaining tortillas and filling.
6.
6. Slice into wedges and serve with salsa and low-fat sour cream on the side.

2 cups cooked, shredded chicken breast

4 whole wheat tortillas
3.
1 cup shredded low-fat cheddar cheese

1 green bell pepper, sliced
5.
1 cup fresh spinach (optional for added fiber)
6.
1/2 cup salsa (low-sugar)
7.
1/4 cup low-fat sour cream (optional)
8.
Salt and pepper to taste
9.
Cooking spray or a small amount of olive oil
