Instructions
1.
1. Preheat a non-stick skillet over medium heat.
2.
2. Spread one wedge of Laughing Cow cheese on one side of each lavash bread.
3.
3. Layer shredded chicken evenly on two of the lavash pieces.
4.
4. Sprinkle mozzarella cheese and add spinach on top of the chicken.
5.
5. Place the other two lavash pieces on top, cheese side down, to form a quesadilla.
6.
6. Cook each quesadilla in the skillet for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
7.
7. Remove from heat, cut into wedges, and serve with a side of apple slices.

2 cups cooked, shredded chicken breast

4 pieces of lavash bread

4 Laughing Cow cheese wedges (light)
4.
1 cup shredded mozzarella cheese (part-skim)
5.
1 cup fresh spinach (optional for added fiber)
6.
1 medium apple (for a side)
