Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a medium pot, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.

While the quinoa cooks, toss the Brussels sprouts and acorn squash with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
4.
In a skillet over medium heat, cook the chicken tenderloin strips for about 6-8 minutes until fully cooked and golden brown.
5.
To serve, divide quinoa among bowls, top with roasted vegetables, chicken, and orange segments. Enjoy!
