Instructions

In a large bowl, combine the chopped romaine lettuce, diced cooked chicken, diced cucumber, and dried cranberries.

If using, add the thinly sliced red onion and crumbled feta cheese.

In a small bowl, whisk together a light dressing using olive oil, lemon juice, salt, and pepper to taste.

Drizzle the dressing over the salad and toss gently to combine all ingredients.
