“I made more chicken salad but got Greek yogurt today :) I ate it in a carb balance whole wheat wrap. I might leave out the walnuts next time since they have so much fat”

Instructions
1.
In a large bowl, combine the shredded chicken, halved grapes, diced celery, and chopped red onion.
2.
In a separate small bowl, mix the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
3.
Pour the yogurt mixture over the chicken and vegetables, and stir until everything is well coated.
4.
If using, add the fresh spinach and mix gently.
5.
Serve the chicken salad in whole wheat wraps or on a bed of greens.

2 cups cooked, shredded chicken breast

1 cup red grapes, halved
3.
1/2 cup celery, diced
4.
1/4 cup red onion, finely chopped
5.
1/2 cup plain Greek yogurt
6.
1 tablespoon Dijon mustard
7.
1 tablespoon lemon juice
8.
Salt and pepper to taste
9.
4 whole wheat carb balance wraps
10.
2 cups fresh spinach (optional for added fiber)
