Shoot I forgot to take a picture! Was proud bc I made chicken salad but measured all the ingredients out. I think Ill make a bigger container of it tomorrow for some more lunches and sub Greek yogurt for the Mayo (we were out). I went ahead and logged it as I was prepping it but I had some grapes with it with dinner

Instructions

  • 1.

    In a large bowl, combine the shredded rotisserie chicken, diced celery, halved grapes, and chopped pecans.

  • 2.

    In a separate bowl, mix the Greek yogurt, olive oil, salt, pepper, and Dijon mustard (if using) until smooth.

  • 3.

    Pour the yogurt mixture over the chicken salad and stir until everything is well coated.

  • 4.

    Serve the chicken salad in whole wheat tortillas or over a bed of greens.
