Instructions
1.
In a large bowl, combine the cooked quinoa, shredded chicken, chickpeas, cucumber, red bell pepper, and red onion.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3.
Pour the dressing over the salad and toss gently to combine.
4.
Add the crumbled feta cheese and spinach (if using) and mix until evenly distributed.
5.
Serve immediately or refrigerate for up to 2 days for flavors to meld.
