Instructions

  • 1.

    In a large bowl, combine the chopped kale and shredded cabbage.

    In a skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.

    Add the cooked sausage to the bowl with the greens.

  • 4.

    Sprinkle pumpkin seeds over the salad.

  • 5.

    Drizzle with apple cider vinegar, and season with salt and pepper. Toss everything together until well combined.
