Instructions
1.
In a large bowl, combine the shredded chicken, diced zucchini, halved cherry tomatoes, and corn. (5 minutes)
2.
In a separate small bowl, whisk together the Greek yogurt, olive oil, lemon juice, salt, and pepper to create a light dressing. (2 minutes)
3.
Pour the dressing over the chicken and vegetable mixture, and toss gently to combine. (2 minutes)
4.
Serve the salad over a bed of mixed lettuce and top with shredded carrots. (3 minutes)
