Instructions
1.
In a large mixing bowl, combine the shredded chicken, diced celery, bell pepper, yellow squash, and shredded carrots.

In a separate small bowl, mix the Greek yogurt, Dijon mustard, salt, and pepper until well combined.

Pour the yogurt mixture over the chicken and vegetables, and stir until everything is evenly coated.
4.
Fold in the grapes or cranberries for a touch of sweetness.
5.
Taste and adjust seasoning if necessary. Serve immediately or refrigerate for later.
