Instructions
1.
Preheat your oven to 200°C (400°F).
2.
Peel and dice the sweet potatoes, then toss them in a little olive oil, salt, and pepper. Roast for about 25 minutes until tender.
3.
While the sweet potatoes are roasting, cook the chicken breast in a pan or grill until fully cooked. Shred the chicken once cooled.
4.
In a large bowl, combine the chopped lettuce, black beans, shredded carrots, red cabbage, and cilantro.
5.
Add the roasted sweet potatoes and shredded chicken to the bowl.
6.
Crumble the feta cheese over the top and add the tortilla strips.
7.
Drizzle the dressing over the salad and toss gently to combine. Serve immediately.

1/2 cup tortilla strips (baked)

4 tbsp dressing (low-fat or homemade)
