Instructions
1.
In a large bowl, combine the shredded chicken, low-fat mayonnaise (or Greek yogurt), Dijon mustard, green olives, and red onion. Mix well until all ingredients are evenly coated. (5 minutes)

Season the mixture with salt and pepper to taste. (2 minutes)

To serve, spoon the chicken salad into lettuce leaves, creating cups. (3 minutes)
4.
Arrange sliced red bell pepper on the side for added crunch and nutrition. (2 minutes)
