Dinner earlier tonight- almost forgot to upload it. I used a salad kit and added premade shredded chicken.

A great way to have a great protein and fiber rich meal!

Instructions

  • 1.

    In a large bowl, combine the salad kit, shredded chicken, and green onions.

  • 2.

    If using, drizzle with olive oil and apple cider vinegar, then toss to combine.

  • 3.

    Season with salt and pepper to taste.

  • 4.

    Serve immediately or refrigerate for up to 2 hours before serving.

    4 cups salad kit (cabbage, carrots, red cabbage)

  • 2.

    2 cups shredded chicken (cooked, skinless)

  • 3.

    1/2 cup green onions (sliced)

  • 4.

    1 tablespoon olive oil (optional)

  • 5.

    1 tablespoon apple cider vinegar (optional)

  • 6.

    Salt and pepper to taste
