Instructions
1.
In a large bowl, combine the shredded chicken, Greek yogurt, Dijon mustard, celery, red onion, and grated carrots. Mix well until all ingredients are evenly coated. (5 minutes)

Toast the whole wheat bread slices lightly if desired. (2 minutes)
3.
Layer the mixed greens on one slice of bread, add a generous scoop of the chicken salad mixture, and top with another slice of bread. (3 minutes)
4.
Serve with a side salad or additional mixed greens drizzled with low-calorie dressing. (5 minutes)
