Instructions

  • 1.

    In a large bowl, combine the shredded chicken, Greek yogurt, celery, red bell pepper, red onion, Dijon mustard, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated. (5 minutes)

    Lay out the whole wheat tortillas on a clean surface. (1 minute)

  • 3.

    Place a handful of fresh spinach leaves on each tortilla, followed by a generous scoop of the chicken salad mixture. (2 minutes)

  • 4.

    Wrap the tortillas tightly, folding in the sides as you roll them up. (2 minutes)

  • 5.

    Slice each wrap in half and serve with shredded carrots on the side. (2 minutes)
