Instructions

  • 1.

    In a large bowl, combine the shredded chicken, diced cucumbers, and diced bell peppers.

  • 2.

    In a separate bowl, mix the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper to create a dressing.

  • 3.

    Pour the dressing over the chicken mixture and stir until well combined.

  • 4.

    Lay out the whole grain wraps and place a generous amount of mixed salad leaves on each.

  • 5.

    Spoon the chicken salad mixture onto the leaves and wrap tightly.

  • 6.

    Slice in half and serve immediately or wrap in foil for later.

    4 cups mixed salad leaves (spinach, arugula, romaine)

    1 cup diced cucumbers

    1/2 cup plain Greek yogurt

  • 7.

    1 tablespoon Dijon mustard

  • 8.

    1 tablespoon lemon juice

  • 9.

    Salt and pepper to taste
