Instructions
1.
In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.

Add the potatoes, carrots, peas, garlic powder, onion powder, salt, and pepper. Stir to combine.
3.
Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
4.
Stir in the chopped cilantro and cucumber just before serving for a fresh touch.
5.
Serve hot and enjoy your healthy chicken stew!
