Your creative use of leftovers to incorporate fiber-rich kale and lean protein from chicken thighs into your meal is a smart way to stick to your healthy nutrition routine :))

Instructions

  • 1.

Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

Add minced garlic and sauté for 1 minute until fragrant.

  • 3.

Season chicken thighs with salt and pepper, then add them to the skillet. Cook for 5-7 minutes on each side until golden brown and cooked through.

  • 4.

Remove chicken from the skillet and set aside.

  • 5.

In the same skillet, add chopped onion and cook for 3-4 minutes until translucent.

  • 6.

Add shredded kale and cherry tomatoes, cooking for an additional 5 minutes until the kale is wilted.

  • 7.

Return the chicken to the skillet, mix everything together, and cook for another 2 minutes to heat through.

  • 8.

Serve warm and enjoy your healthy chicken thigh recipe!
