Instructions

  • 1.

    Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until translucent (about 3-4 minutes).

  • 2.

    Add sliced carrots and chopped celery, cooking for another 5 minutes until they start to soften.

  • 3.

    Pour in the chicken broth and bring to a boil.

  • 4.

    Add the shredded chicken, chopped kale, and thyme (if using). Reduce heat and let simmer for 15-20 minutes.

  • 5.

    Season with salt and pepper to taste before serving.
