Instructions
1.
Heat olive oil in a large pot over medium heat (about 2 minutes).

Add minced garlic and sauté for 1 minute until fragrant.

Add diced chicken breast and cook until browned, about 5-7 minutes.

Pour in the chicken broth and bring to a simmer.

Add spiralized zucchini and spinach (if using) to the pot.
